For the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Syrup: Place the listed ingredients inside a saucepan, heat until it reaches a light boil, agitating to dissolve. Next, remove from the burner allowing it to cool down completely. Decant into a sealable bottle, close it and store in the fridge, where it will keep for up to a month.
To make Batch Mix: Combine all the liquids into a large bottle, let it rest for one hour, then filter it preferably using muslin, so it's fully clarified.
When ready to serve: Add 85ml of the premix into a mixing glass packed with ice, gently stirring lightly for one minute until cold. Strain into a chilled martini glass or similar, decorate with a few cranberries and complete it by giving it a light spray with the mandarin essence over the drink.
